To be consistent with the USDA’s MyPlate recommendations, make fruits, vegetables and grains the majority of your intake. In Blue Zone areas most people only consume small amounts of meat, focusing on consuming a rich array of fresh fruits and vegetables. Stop by the Farmer’s Market on Saturday from 8:00 AM to 12:00 PM by the Wapsipinicon Mill in downtown Independence, to pick up fresh, locally grown vegetables and fruit! Or stop by your store’s produce department to find a variety of fresh fruits and vegetables.
One of Indigo’s favorite vegetables is freshly grilled asparagus. It is quite simple to make. Preheat the grill for high direct heat. Prepare the asparagus by washing, and cutting the rough ends off. Grill the asparagus for 5 to 10 minutes until tender crisp. Turn the asparagus often to prevent burning. Serve immediately.
